While fish is not as plentiful or quality in Malta as one might think, we do get a few good kinds.
Sea bass is usually fresh and great quality. Here is a recipe I borrowed from a Maltese friend.
It has lots of local, yummy ingredients.
I used a 9x13" glass baking dish (add a bit of olive oil on the bottom before adding fish).
Coat cleaned/washed fish (recipe for 4 sea bass) in course sea salt.
Then add chopped garlic (3 cloves), halved cherry/grape tomatoes (about 20) and 1 lemon sliced.
I lay in the pan, inside the whole fish and top with all ingredients.
Add a little fresh mint and basil leaves inside the fish. Finish by sprinkling lemon juice & olive oil.
Bake in oven for 20 to 30 minutes at 350F. Fish will fall off the bone when finished.
